I can’t get enough of Mexican food, it’s in my blood. My grandmother’s made amazing cuisine and my mom and dad to this day make the most amazing Spanish rice and chile verde amongst so much more. I am always looking for great Mexican recipes to create for my own family and thanks to some ideas on Pinterest, I stirred up the perfect combination of ingredients to make deliciously flavorful chicken tacos. Bonus, it’s made in the slow cooker so it’s crazy easy!
Here is a recipe that you will make over and over, I guarantee it!
Easy Slow Cooker Chicken Tacos
6-8 chicken thighs
1 packet taco seasoning
160z. of your favorite salsa
Place thighs in slow cooker, sprinkle seasoning over the chicken and top with salsa. Cook on high 4-5 hours, shred with a fork. Add to warmed tortillas and fill the tortilla with toppings like corn, black beans, sour cream, and guacamole.
Mix it up by placing the chicken mixture over tortilla chips and melt cheese over the top for nachos! We’re doing that next time!
