Part 3 of 3 of the Weight Watchers Cheese Swap It Challenge has me making a quick and easy Chicken Mozzarella (chicken parm). Instead of using regular mozzarella cheese, I’m using Weight Watchers’ version that has less fat and less calories and is a shredded Italian blend of mozzarella, white cheddar, provolone, and parmesan. Chicken Mozzarella
6 boneless, skinless chicken breasts
Shake and Bake chicken seasoning
1 1/2 cups of your favorite pasta sauce
1 1/2 cups Weight Watchers reduced fat, shredded, 4 cheese Italian blend
Coat chicken with Shake and Bake according to the directions on the box (simply moisten with water and shake with mix in bags provided). Lay them in a lightly greased 9X13 baking dish and cook for 20 minutes at 400 degrees. Heat sauce on medium for the last 5-8 minutes of chicken cooking time. Remove chicken from oven and top each breast with approximately 1/4 cup of pasta sauce. Sprinkle about 1/4 cup of cheese on each breast and place back in oven on broil for about 7-8 minutes or until cheese is melted and bubbly.
TOTAL POINTS: 7 per chicken breast
This was another homerun for my family! Truly there is no difference in taste when you choose Weight Watchers Cheeses over regular brands, so you feel good eating a lighter calorie cheese without the guilt!

Ladies, always check for doneness by cutting into the thickest part. The juices MUST run clear. I’m not sure that 20 minutes at 400 is long enough. At 20 minutes, you might need to go to 450. Again, always check for doneness.
I cooked mine longer, maybe because it was thicker, but it tasted great and my whole family loved it!! Thanks for a recipe that will definitely go in my keeper file!!
