With 3 kids and 3 different likes and dislikes sometimes it’s a struggle to keep meal options creative and entertaining without spending hours of prep time in the kitchen. KRAFT Fresh Take wants to help me and you make something amazing and keep dinner time interesting with their convenient options.
Found in the dairy aisle, this simple meal kit consists of a cheese and breadcrumb mixture that gives you flavorful, crisp and cheesy dishes with only 5 minutes of prep time. KRAFT Fresh Take comes in six flavor varieties including: Southwest Three Cheese, Savory Four Cheese, Rosemary and Roasted Garlic, Italian Parmesan, Chili Lime and Panko, and Cheddar Jack and Bacon.
My local Safeway only has been carrying the Southwest 3 Cheese and the Italian Parmesan. I really wanted to make the Chili Lime and Chicken Bake , so I adapted it and I used Italian Parmesan! To trim even more time off our meal prep, I purchased a cooked rotisserie chicken!
Parmesan Chicken Bake
- 1 pkg. (6 oz.) FRESH TAKE Italian Parmesan Cheese Breadcrumb Mix, mixed together
- 2 cups shredded cooked chicken
- 2 cups cooked long-grain white rice
- 1/2 can (10-3/4 oz.) fat-free reduced-sodium chicken broth
- 1/2 cup sour cream
- Heat oven to 350°F. Reserve 1 cup cheese mixture.
- Combine remaining cheese mixture with remaining ingredients; spoon into 1-1/2-qt. casserole sprayed with cooking spray. Top with reserved cheese mixture.
- Bake 20 to 25 min. or until heated through.
I halved the amount of broth because I know how salty it can make your meal. Also, I read the reviews on the Kraft site and someone mention it was too wet, so the reduced broth and halving of the sour cream. The consistency was perfect with those proportions, but I do feel it was still very salty. I love the cheesy Parmesan flavor as well as the texture of the seasoned breadcrumbs, together it really gave the chicken and rice an Italian kick! I would possibly replace the broth with cream of chicken (or mushroom) soup! Also I did only put cheese on the top, separate from the whole Fresh Take mixture, that was an error on recipe reading for me. Otherwise the top would have browned much more!
The overall time was quick using the rotisserie chicken, and we sat down for a family meal in no time. This meal is really easy to adapt, I’d add fresh peas or corn to brighten it up a bit next time! Also, each package has additional recipes on the reverse, check those out!
